“O imaginário histórico-cultural do mundo insular dos arquipélagos dos Açores, Madeira, Canárias e Cabo Verde, sustenta-se de práticas ancestrais, baseadas nas memórias da sua identidade coletiva. Os hábitos alimentares constituem um dos pilares dessas reminiscências, aliados, em muitos momentos, às práxis de subsistência e à criatividade das suas populações, condicionadas pela insularidade e a aspereza do território inóspito.

A existência de uma cozinha tradicional insular nas ilhas da Macaronésia é, pois, subordinada às questões de identidade nestes arquipélagos, através dos seus laços históricos, das suas afinidades biogeográficas e da própria cultura que une estas regiões insulares, situadas no Atlântico Norte, compostas por um total de 28 ilhas habitadas, extensíveis aos continentes europeu e africano.”

"The historical-cultural imaginary of the insular world of the Azores, Madeira, Canary Islands and Cape Verde archipelagos is sustained by ancestral practices based on the memories of their collective identity. Food habits constitute one of the pillars of these reminiscences, allied at many times to the subsistence practices and creativity of its populations, conditioned by the insularity and roughness of the inhospitable territory.
Religiosity has become a unifying factor of socialization of the island, creating a set of identity elements that go beyond the sacred and transcend the profane, based on food experiences framed in the various moments of the Christian calendar, giving rise to a gastronomy, rich in flavours and history.
The existence of an insular traditional cuisine in the Macaronesian islands is, therefore, subordinated to the identity issues in these archipelagos, through their historical ties, their biogeographical affinities and the very culture that unites these insular regions, located in the North Atlantic, composed of a total of 28 inhabited islands, extending to the European and African continents".
